Ingredients
- 1 1/2 cup all-purpose flour or maida
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- A pinch of salt
- ½ cup unsalted melted butter
- 1 cup sugar
- 1 egg, at room temperature
- ¼ cup coconut flavoured yogurt
- ¾ cup milk
- 1 teaspoon vanilla
Buttercream
- ¾ cup unsalted butter
- ½ cup mango puree 1/4 teaspoon salt
- ½ teaspoon vanilla extract
- 4 cups icing sugar
Directions
- The first process to make a mango and vanilla cupcake is to preheat the oven to 170°C and line a muffin pan with 12 paper liners.
- In a bowl, take and toss together all-purpose flour, baking soda, baking powder and salt.
- For the next process, whisk together melted butter and sugar in a medium shaped bowl. Combine the egg, milk, flavoured yogurt and vanilla. After stirring together, gently pour into the dry ingredients. Mix until it turns smooth and be cautious not to over mix.
- Fill the paper liners with batter until ¾ full and allow baking for approximately 18-20 minutes or until a toothpick inserted into the centre of the cupcake comes out clean. Allow the mango & vanilla cupcakes to cool completely before frosting.
Buttercream
- Whip the butter until it turns light and fluffy. Mix in the mango puree, vanilla and salt, mix until somewhat incorporated. Don’t forget to add the icing sugar, one cup at a time and blend nicely until it turns smooth.

- 1½ cup unbleached all-purpose flour

- 1 cup light brown sugar
- 1 cup granulated sugar
- 2 eggs
- 3 cups rolled oats
- 1 cup chocolate chips
- ½ cup dried cranberries
- ½ cup finely chopped pistachio

Instructions
- Start baking by preheating the oven to 350° F.
- To bake the cookies, try to adjust the oven racks to the low and middle positions as you will use two trays. Line two baking sheets with parchment paper and set them aside.
- Take a medium bowl and whisk together baking powder, flour and salt in it. Then, set it aside.
- Take the bowl of an electric mixer fitted with the wire attachment and beat the butter on medium flame until it turns creamy. Combine the white and brown sugar and beat for about 2-3 minutes or until it turns fluffy. Beat in the eggs, adding one egg at a time.
- Use a spatula to manually stir the dry ingredients into the butter-sugar mixture. Once thoroughly combined, add in the oats, pistachios and cranberries.
- Use an ice cream scoop to dough balls onto the parchment paper-covered baking sheets. Place the balls at least 2 inches apart from each other.

- Take a medium saucepan half-filled with water and bring it to a boil. In a bowl that is set over the saucepan of simmering water, place white chocolate. Let the chocolate melt, stirring just a few times. Remove this bowl from heat and use a fork to drizzle the white chocolate over the cookies.
- Before serving, let stand for 20-25 minutes for the chocolate to settle. For better results, you can also place cookies in the fridge for the chocolate to harden quicker.
