  • 6 tablespoons of cubed butter
  • ⅓ cup granulated sugar
  • 2 large eggs, at room temperature
  • 4 tablespoon maida or all-purpose flour
  • 2 teaspoon peanut butter
  • 1 ½ tablespoon unsweetened cocoa powder

Directions

  • According to online classes for cake making, begin by preheating the oven to 200°C and spraying two 10gm ramekins with non-stick cooking spray.
  • Take 1 tbsp of cocoa powder in the first ramekin. Swirl the unsweetened cocoa powder all around the ramekin and take out the extra in the second ramekin.
  • Mix in the remaining ½ tbsp of cocoa powder and remove the excess cocoa powder once the ramekin is covered.
  • Mix in the semi-sweet chocolate and butter in a medium-sized microwave-safe bowl. Microwave in 30-second intervals and stir well after every 30 seconds. Continue to do this process 3-4 times until the chocolate turns smooth and completely melts down.
  • Set the mixture aside and let it cool for approximately 10 minutes.
  • Mix in the eggs and granulated sugar and whisk until thoroughly combined.
  • Next, mix in the maida or all-purpose flour. Mix until the flour is barely combined using a spatula.
  • Pour this batter into the 2 ramekins.
  • Place a teaspoon of the peanut butter in the centre of each ramekin while making sure to press it down a little and cover it with the cake batter.
  • On a quarter sheet pan, place the two ramekins and keep them inside the oven to bake for about 15 minutes. The exterior of the cake will be baked and the centre will still be jiggly.
  • Serve it immediately to your guests. If you’re feeling a bit more experimental, add a scoop of ice cream to the simple lava cake.
