Oreo Cake Recipe-1: The Regular Oreo Cake

INGREDIENTS

Chocolate layer cake

3/4 cup cocoa powder

1 and a 1/2 cup sugar

2 tablespoons vanilla extract

1 tablespoon (tbsp) baking soda

1/4 tablespoon salt

1 and a 1/2 cup cake flour

2 large eggs

1/4 cup vegetable oil

1 cup sour cream at room temperature

1/2 cup hot coffee

1 cup milk chocolate chopped

3 125gms Oreo biscuits

1/4 cup unsalted butter

1/4 cup shortening

2 and 1/2 cups powdered sugar

2 tablespoons milk or cream

3/4 cup unsalted butter

2 tablespoons vanilla extract

1/2 cup cocoa powder

4 cups powdered sugar

1 tablespoon vanilla extract

Chocolate buttercream

1/4 cup milk or cream

16 additional Oreo cookies, turned into a fine crumb

DIRECTIONS

Step 1

Preheat the oven to 170°C. Take two 9-inch cake pans and grease them with oil evenly to prevent the cake from sticking to the pan. In a single layer, line the bottom of the pan with Oreos and set them aside.

Step 2

In a large bowl, using a handheld or stand mixer, take 3/4 cup of cocoa powder, 1 and a 1/2 cup sugar, 1 and 1/2 cup cake flour, 1 tbsp baking soda, a pinch of salt together and blend them on low speed for around 30 seconds.

Step 3

Add 2 eggs, 1/4 cup of vegetable oil, 1 cup sour cream, 2 tbsp of vanilla extract and mix them for 1 minute on medium flame.

Step 4

Remove the bowl from the mixer and add coffee and chocolate chips. Stir it well to combine. As you stir, some of the chocolate chips will meltdown. Keep in mind, not to overdo the mixing process.

Step 5

Pour the batter into the prepared cake pans over the Oreos and bake for 30-35 minutes or until a toothpick inserted in the cakes comes out clean. Allow the cakes to cool down wholly in the pan.

Step 6

Let the cakes cool down and, in the meanwhile, you can make the oreo cream filling. In a large bowl, using a handheld or stand mixer, cream the butter and shorten together on high flame until fluffy. Add the powdered sugar, 1 cup at a time, alternating with the milk/cream and vanilla. The filling will become thick but you may add more milk/cream if you prefer. Set this aside in the refrigerator.

Step 7

While the cakes cool, you can also make the chocolate buttercream. It is prepared in the same manner as oreo cream filling.

Step 8

In a large bowl, using a handheld or stand mixer, cream the butter on high flame until fluffy for about 1 minute.

Step 9

Beat in the cocoa powder and vanilla on low flame, then add the powdered sugar, 1 cup at a time, alternating with the milk/cream. The buttercream will be thick and fluffy. Set it aside in the refrigerator.

Step 10

Once the cakes are cooled, assemble the cake. Place 1 cooled layer on a large plate with oreo cookie side down. Using a spatula or a knife, cover the top with a 1-inch thick layer of Oreo cream filling. Top it up with the second cake, this time with the oreo cookie side up. Cover the prepared layered cake with chocolate buttercream. Covering the cake in Oreo crumbs tends to get a little messy. For this, you have to pat them up the sides with your hands and all over the top of the cake.

Step 11

You are done with the Oreo cake recipe and the cake is ready to be sliced and served. The leftover cake can be covered and stored in the refrigerator for up to 3 days.

Oreo Cake Recipe-2: Oreo Bites

INGREDIENTS

36 Oreo biscuits

4 tablespoons of butter

1 cup sugar

250gms cream cheese softened

1 cup full-fat sour cream

4 eggs

1 tablespoon vanilla

125gms semisweet chocolate

125gms white chocolate

INSTRUCTIONS

Step 1

Preheat the oven to 160°C.

Step 2

Line a 9-inch baking pan with foil, with ends extending over the sides. Crush 24 Oreo biscuits. Melt 4 tablespoons of butter and press onto the bottom of the prepared pan.

Step 3

In a large bowl, using a handheld or stand mixer, beat the cream cheese and sugar together until blended. Add full-fat sour cream, vanilla and mix them well. Add eggs, one at a time and beat them well until blended. Chop off the remaining cookies. Gently stir into the batter and pour it over the crust.

Step 4

Bake the cheesecake for about 35-40 minutes or until the sides and the centre is almost set. Let it cool down wholly in the pan.

Step 5

When the cheesecake is completely cooled down, cover it with plastic wrap and keep it in the refrigerator for at least 2 hours.

Step 6

When chilled, remove the cheesecake using the foil overhang and slice it into bite-sized pieces. Place the cheesecake bites on a parchment paper-lined baking tray.

Step 7

Melt the semisweet chocolate and white chocolate separately in two different bowls and pour the melted chocolates into two zip lock bags, one for the semisweet chocolate, one for the white chocolate.

Step 8

Tear off a small piece around the corner of the bag and drizzle the chocolate over the cheesecake bars. Lastly, let the bars cool until they are ready to be served.
