You can make a pineapple cake with or without egg. Both ways the taste of the cake is delicious and you won’t be satisfied with just a single piece of it. In this blog we will have a look at the recipe of both types of cake. Let’s start with baking an egg-based pineapple cake.

Ingredients
  • 4 eggs
  • ¾ cups of refined flour
  • 2 cups whipped cream
  • ¾ cups of powdered sugar
  • 1 cup chopped pineapple
  • ¾ tsp vanilla essence
  • ¼ cup of pineapple syrup
  • ¾ tsp baking powder
Recipe

After you have gathered all the ingredients let’s start baking this cake recipe. Take a mixing bowl and break eggs into it. Add powdered sugar, vanilla, salt and baking powder. Beat them all together until they become light and foamy. The best way to know that mixture is beaten enough when it leaves a trail when the beater is lifted and moved over the batter. This trial will soon blend into the batter. Gradually add refined flour into the mixture and fold it with light cutting and upward, downward and outward strokes. Preheat your oven for around 20 to 30 minutes. Take two tin pans and grease them with butter.

Sprinkle some flour or granulated sugar over it. This will prevent your cake from sticking to the base and sides of the pan. Divide the batter into two halves and pour them in the pan. Bake it in the pre-heated oven for almost 15 minutes. Remove the cake from the oven after it is done. Let the cake cool in the pan and check it with a toothpick if it is done or not. After the cake has cooled down, remove it from the pan and place it over the cake rack.

Sprinkle half pineapple syrup on the top of a cake and then layer it with the whipped cream and the chopped pineapples. Now put the second piece of the cake over the first and repeat the same process. Cover the entire cake with the whipped cream. Use a spatula to smoothen out the edges. Decorate the cake with pineapples and freeze it. The cake is ready to eat. You can easily bake this delicious fruit cake at your home for any occasion.

Refined Flour

Also known as ‘maida’ this is used in every cake recipe and it is the base of every cake. Refined flour is preferred for any eggless cake recipe because it helps the cake batter to rise and become soft and fluffy. Other types of flour like whole wheat flour are heavy and require egg for rising. Make sure you sieve the flour before mixing it with other ingredients. Sieving helps the flour incorporate more air which in turn helps the cake become spongy and fluffy.

Milk

Milk is another commonly used ingredient for cakes. It adds softness to baked goods and makes them perfectly moist. You can use regular toned milk, full fat milk or low fat milk. The choice of the milk depends on what you prefer.

Vinegar and Lemon Juice

Vinegar and lemon juice is used in almost every eggless cake recipe. It is considered a perfect substitute for eggs. The acidity from these ingredients helps the cake gain perfect texture. It makes sure that the cake tastes and looks just like the one made with eggs.

Caster Sugar

Caster sugar is used to provide the sweet flavour to the cake. If you are health conscious then you can use jiggery in place of sugar.

Vanilla Essence

Vanilla essence is a great way to add flavour to any cake. In pineapple cake a little vanilla essence works wonders. The flavour of the essence is very strong. So make sure that you don’t add too much of the essence in the cake.

Fresh Pineapple

Fresh pineapple is used to make compote for pineapple cakes. It adds great flavour and additional texture to the cake.

Whipping Cream

Whipping cream is an important ingredient of every cake. It is used to layer the cake and adds a sweet taste to the cake.

Before you start baking courses or learn the process of baking the pineapple cake, keep the pineapple compote ready for it. The word ‘compote’ may sound fancy but the preparation of compote is very easy and it is also an important part of this cake recipe. It is made with fresh fruit, water and sugar. Only three ingredients are required to make a compote. Take a pan, add some sugar, fruits and water to it and cook it till you get a nice yellow jam like consistency. Make sure your fruit, which is pineapple in this cake recipe, is cut into fine pieces. This will help the fruit melt and cook easily. You can use any type of sugar, be it white or brown.

With brown sugar the colour of your compote will be of a darker shade. Make sure that you cook the compote on a medium flame. The best thing about a compote is that you can store it in an airtight container and use it for up to a week. Now let’s start baking this delicious eggless pineapple cake. •  1 cup caster sugar
  • ½ cup vegetable oil
  • ¼ cup yogurt
  •  2 teaspoon lemon juice
  • 2 teaspoon vanilla extract
  • 1 ¼ cup milk

Now take a bowl and add oil and sugar into it. Whisk them together at a high speed for almost 2 minutes. Now add vanilla extract and yogurt to it and again whisk them together for 2 minutes. In the same bowl, now add milk and lemon and mix all the wet ingredients together. Take a large sieve and sieve all-purpose flour, baking powder and milk powder into the same bowl. Use a spatula and mix the wet and dry ingredients together. Use a cutting and folding method to mix the ingredients of the bowl. Pour the batter into two pans and bake them for 25 to 30 minutes in the pre-heated oven.

After the cake is done, let them cool in the pan itself. Remove the cake from the pan after 10 minutes. Place one layer of the cake on the rack and brush it with the pineapple or sugar syrup. Put the whipping cream in the piping bag and pipe it on the edges of the cake. This will help you create a shallow well in the middle. In the remaining space in between, spread a thin layer of pineapple compote. Now put some whipping cream on the top and place the second layer of the cake over it. Repeat the same process again. Garnish it with pineapples the way you want to and the cake is ready.

Avoid Your Cake from Sticking to the Pan while Baking

Many times cakes tend to stick at the base and the sides of the pan and it becomes very hard to remove them after baking. Baking courses help you understand that Baking requires lots of patience and effort and you would want to see a perfect result after all the efforts and time that you have put in. But baking disasters happen every now and then. Sometimes improper measurements can spoil the whole recipe and the worst part of a spoiled cake is that it takes ages to remove them from the baking pan.

Cake making is a complicated process and you need to measure everything properly in order to get a perfect cake. You also need to be prepared in advance (by learning professional baking courses), in case any blunder happens. The biggest nuisance is the cake sticking to the baking pan. Removing it is a big task and therefore, you must be prepared well before tackling this case tactfully. There are various tricks and tips through which you can easily avoid sticking the cake to the pan.

Keep reading this blog to get proper information on this topic and by the end, you’ll get to know what you are doing wrong and how you can avoid those little mistakes. You can also join baking courses and you’ll feel more confident while baking and enjoy cakes more often. Here are some ways to avoid the cake from sticking to the pan:

1. Consider Using Parchment Paper

Parchment papers are the best thing to use to keep your cakes from sticking to the pans. These papers do an excellent job of keeping the cake from sticking to the pan and they are also very inexpensive. Using parchment paper is no rocket science, all you need is to trace the lining of the baking pan on the parchment sheet and cut out the perfect shape. Like most people, you can also use a permanent marker to trace the shape of the baking pan or you can simply use a pencil and cut out the shape using a pair of kitchen scissors. After you are done, place the papers on the base of the baking pans and you are ready to go. This way you’ll definitely get better results and your cake also won’t stick to the pan.

2. Greasing Your Cake Pan

Greasing your cake pan is the next important recommendation when it comes to avoiding the cake from sticking to the pan. When getting ready to go through this process you have few options. You can use normal butter to grease your pan as it is the standard practice or you can also use vegetable shortening to get this done. Most of the bakers prefer to use vegetable shortening rather than using butter as it gives a better output. The reason behind this being that water can cause the cake to stick to the lining of the pan and butter contains more water as compared to vegetable shortening.

Also, vegetable shortening doesn’t add any extra flavour or taste to the cake. If you are thinking that using butter could enhance the taste of the cake then you are mistaken yet again. A thin layer of butter on the base of a baking pan would have no effect on the taste of the cake. Once you’ve decided what to use, smear some amount of butter or vegetable shortening on the base and the lining of the pan. You can use a brush to spread it evenly.

3. Sprinkle some flour as well

For amazing results, you can go ahead and sprinkle some flour on the bottom of your baking pan. A small amount of flour can be sprinkled directly over the butter or vegetable shortening. If you want to ensure that your cake doesn’t stick to the sides of the baking pan then don’t skip this process. You’ll be glad to see the results and this can save you from all the extra effort. You’ll be amazed how easily the cake comes out after you leave it for a while and let it cool on the wire rack.

4. Use a Non-Stick Pan

Some people absolutely love the idea of using non-stick pans for baking as they are easy to use. These pans are specially designed to avoid the cake from getting stuck to the pan while baking. They have a special non-stick coating that is there so that it can prevent the cake from sticking. If you have the choice of a non-stick pan then you should definitely go with it. These pans are easily available all over the market and are perfect for hassle-free baking.
